About mixing cake filling with solid ingredients

A new case study deals with the mixing of cake filling or chocolate filling with solid ingredients.

For a filling to be mixed, the liquid product with high fat and sugar content is pumped into the INDAG solid-liquid inline mixer (DLM/FS) via an external pump. For a creamier consistency, the product often has a gas content of a few percent. The solid ingredients are added to the solid-liquid inline mixer with a solids feeder. The rotating mixer feeds the product via a screw conveyor and mixes simultaneously through rotor and stator elements. This mixing process is very gentle so as not to damage the often fine foams.
